Aged longer than their standard sharp varieties until it develops a firm, crumbly texture and a bold, complex bite that lingers in the best possible way. Sealed in elegant black wax and hand-packed at the Rotelle family's fourth-generation creamery in Honey Brook, PA. Cheddar gets sharper as it ages, and Robertson's Select is proof that patience pays off.

September Farm is a fourth-generation family creamery tucked in Honey Brook, PA, where David and Roberta Rotelle make small-batch farmstead cheeses from fresh whole milk sourced from local dairies. Every block is hand-packed, aged, and dipped in wax using time-honored method, and the results speak for themselves. National award-winners, American Cheese Society honorees, and featured on Food Network's Will Work for Food.
