Their maple vinegar starts and ends with Dark Grade B Pennsylvania maple syrup: imagine the syrupy, rich flavor with none of the sweetness. This is a great vinegar to use in warm vinaigrettes or reductions, or in baking (check out recipes for vinegar pie or Amish Raisin- custard pie…). They age their maple vinegar in oak barrels for at least a year- resulting in a beautifully amber colored vinegar, with a great texture and concentration.
